Mini Low-Carb Cheeseburger Bites with Dipping Sauce
INGREDIENTS
- 2 pounds ground turkey or chicken
- 1 teaspoon salt
- 1/2 teaspoon pepper
- 1/2 teaspoon onion powder
- 1 teaspoon garlic powder
- 24 cherry tomatoes, halved
- 2 cups red leaf lettuce, chopped
- 8 ounces cheddar cheese, cut into 48 pieces
- optional: pickles
Thousand Island Dip
- 1 clove garlic, minced
- 1 cup plain Greek yogurt
- 1 tablespoon extra virgin olive oil
- 2 tablespoons reduced sugar ketchup
- 2 tablespoons chopped dill pickle
- 1 teaspoon apple cider vinegar
- 1/2 teaspoon salt
- 1/2 teaspoon onion powder
- 1/4 teaspoon pepper
- 1/2 teaspoon Tabasco sauce
DIRECTIONS
- Preheat oven to 400 degrees.
- Combine the first 5 ingredients together in a bowl.
- Using about 1 tablespoon of the meat mixture, make 48 mini patties or meatballs.
- Place them on a foil lined baking sheets and bake for 15 minutes.
- Cool slightly to handle.
- To assemble burgers on toothpick start with a tomato half, pickle, lettuce, cheese and burger.
